Polish Recipe: Lazy Pierogi

Ingredients:
1 pound cottage cheese
1 cup flour
1 tablespoon cream of wheat (farina)
3 eggs, separated
1/2 teaspoon salt
2 tablespoons bread crumbs
2 tablespoons butter

Instructions:
Mix cottage cheese with egg yolks; whip egg whites until stiff. To cheese mixture add cream of wheat, salt, and beaten egg whites and mix gently with a woodenspoon. Stir in flour. If the mixture is too thin, add some more flour. Bring salted water to a boil in a large saucepan. Place dough on a cuttingboard, form 1/2 inch thick rolls, and flatten them slightly. Cross hatch the dough with a knife, and then cut the dough into bite-sized pieces. Cook them in boiling water. When they float to the surface, cook for one additional minute, then remove with a slotted spoon. Serve with melted butter and browned breadcrumbs.
